What's For Dinner?

Steve that casserole looks awesome! Did the broccoli come out nice and tender or firm?

I showed DH your link for the sliders and he drooled and said "Okaaaay!" (a la Forrest Gump). :lol:

I have a meatloaf and bakers in the oven and will have corn with it.

The broccoli was tender. It was one of those Eat Smart steam in the bag vegis. I got quite a few when they were a buck a bag down here, cooked them for 1/4 of the time and threw them in the freezer.

It's fend for yourself night. DH is in New Hampshire for work so the lucky **** is prolly dining on lobstah.
 
Right - he prolly got too many on sale - cooked them part way and then put them in the freezer to finish cooking later, like in the casserole.

Leftover turkey turned into Turkey Pot Pie and maybe some pineapple if I get around to cutting it up.

Anyone else struggle with making dinner during the month of December? I run into this every year. Feel so busy with holiday preparations that I have little time or energy to put towards dinner.
