What's For Dinner?

Leftover turkey turned into Turkey Pot Pie and maybe some pineapple if I get around to cutting it up.

Anyone else struggle with making dinner during the month of December? I run into this every year. Feel so busy with holiday preparations that I have little time or energy to put towards dinner.

Val I pretty much feel that way throughout the year! :lol:
 
I made chicken and tofu satay with peanut sauce & fried rice. It was really good!

DD18 was carrying her plate to the table (hers with the limited amount tofu, of course) and DD14 was taking off her coat. She threw up her arm to shake off her coat & hitt DD18's plate. We are going to be finding peanut sauce & peas from the fried rice for months. :surrender: Needless to say, I had a screaming fit. I guess the new kids are learning sooner rather than later that when Mom is pissed, MOM IS PISSED. :lol:
 
They liked it! I swear, they eat ANYTHING you put in front of them. I've noticed the girl doesn't like meatballs, and she didn't really like the stuffed peppers, but she likes meatloaf, so I don't know what's up with that. The boy has an aversion to some green vegetables, but he'll still eat them, just not a lot. He even ate brusselsprouts on Thanksgiving!

They have definitely been trained to eat & go to bed. It's quite awesome after 19 years of pickiness from my own kids. :p
 
We had bacon-wrapped pork loin.
2 lbs thick sliced bacon:4.5 lbs pork loin is a pretty nice ratio. Bacon in every bite, yum yum! Makes me wonder if I'll need 9 lbs of bacon to wrap the 20 lb turkey in the freezer...

Tonight we are having stuffed cabbage.

I always called it "pigs in the blanket," but DH corrected me last week that it's stuffed cabbage & pigs in the blanket are hot dogs wrapped in crescent rolls. Is he right? :lol: Maybe I will change it to "cows in a snuggie." :dunce:

I think of sausage in pancakes for pigs in a blanket!

I'm hungry. :lol:
 
Stuffed green peppers for us tonight. I have the "stuff" frozen and sitting out to defrost.
 
BBQ ribs in the crockpot (and then glazed under the broiler)
Bacon sauteed green beans
Buttered corn

Yeah, we're going to eat healthy tonight! :-)
 
I went for comfort food tonight - ground beef with onions and green peppers, corn and macaroni w/bbq sauce - all mixed together.
