What's For Dinner?

Anyone know of a good smoke sausage recipe? I have two pakages of eckrich smoked sausage in my freezer and no idea what to make with them but want to use them up!

Put some veg. oil in a large skillet. Add one large onion sliced thin. Then add several potatoes peeled (or not) and sliced a lil thick. Cover and simmer until the onions are soft and the taters are tender (stir a few times). Then add a pound of smoked sausage cut up. Sprinkle a liberal about of garlic powder. Cover again until warmed, stir a few times. It's yummy.
 
Zucchini and spaghetti squash lasagna for us. This time I also added mushrooms. Dairy free adhd boy got his own small pan made with tofu (combined with nutritional yeast and some other seasonings). He ate 3 servings. He was off the wall to the extreme today (:

Lol, I actually had a taste for these tonight for myself so I already decided I'm eatin them wednesday!
YES! You could slice them up and put them with shrimp in a jambalaya recipie. Or easier you could lightly brown them on the grill/stove and drain grease. Then cut up 1-2 red peppers, 1-2 green peppers, a med onion and mince a couple cloves of garlic. Season with a little salt and pepper. Put in the crockpot with approx 2 cups of chicken broth for about 6-8 hours and have easy sausage and peppers. Serve over noodles or rice. Or just add instant rice in the last couple of hours and mix in the liquid. Really easy and good!
Thanks! They all sound good, I think I'll bring out the crockpot. Would love to try a new crockpot recipe!

This had me drooling too lol, definately putting this in the meal plan. I have made their cheeseburger macaroni and DH and I really liked it!

This sounds good too! Looking forward to trying them all. I'm assuming your adding the sausage cooked already? I figure since your just covering till warm, but just want to make sure!

I like it simmered in sauerkraut with boiled or mashed potatoes on the side, but no one else in my family does...we often have it with rye bread, fried potatoes, pork & beans, and applesauce as sides...DS puts it in his potato soup...
 
Tonight will be black bean and summer squash enchiladas and probably brown rice and beans as a side. I also have some asparagus and broccoli I am considering making as sides too.
 
I made a huge pork shoulder the other night, so tonight we had the rest as pulled pork on buns with Fries....it was supposed to be left over night...I made a huge pot of HM chicken noodle soup, but DH finished it off for lunch! We still had the pork and the sandwiches were tasty!
 
I bought too many eggs last week and wanted to use up some odds and ends. Tried Juevos Rancheros on the kids for the first time and even picky DS3 cleared the plate. I had to hide the cheese :snicker: because he's convinced he's a cheese hater..... even though he eats it on pizza and could eat parm plain with a spoon but that's ok: :hi5
 
Another good smoked sausage recipe.

I don't add the beans, but put a 14 oz. can of the tomatoes instead.

Moroccan lentil stew (already in the crock pot) and salmon. I got a vegetarian version recipe of the stew on the net and this is the first time I'm trying it, but we like everything that goes in it.
 
This one?

Ingredients:
•2 cups lentils
•2 or 3 tomatoes, grated
•1 medium onion, chopped
•3 cloves of garlic, finely chopped or pressed
•4 tablespoons chopped fresh parsley or cilantro
•2 1/2 teaspoons cumin
•2 1/2 teaspoons paprika (some hot, if desired)
•1 1/2 teaspoons ginger
•1/2 teaspoon pepper
•2 teaspoons salt
•1/3 cup olive oil

Preparation:


Mix all ingredients in a pressure cooker or pot. Add 2 liters (about 2 quarts) of water, and bring to a simmer.

Pressure cooker method. Cover, and cook on pressure over medium heat for 35 to 40 minutes, or until the lentils are tender. If the lentils are still submerged in sauce, reduce the liquids so that the sauce is ample, but not watery. Adjust the seasoning if desired, and serve.

Pot method. Cover, and simmer the lentils over medium heat about 1 1/2 hours, or until the lentils are tender and the sauce is not watery. (If the liquids reduce too much during cooking, add a little water to prevent the lentils from burning.) Adjust the seasoning if desired, and serve.

Scoop up the lentils with crusty bread, or eat them with a spoon.



LOVE it....but we add 2 large beef bouillion cubes and a couple tablespoons of tomato paste once it is brought to a boil

I used 1 diced onion
2 diced carrots
at least a 1" piece of ginger peeled and minced (well minced the best I could, anyway)
2 cups cooked garbanzo beans
2 cups cooked black beans
1 cup dried lentils
2 cans diced tomatoes (only called for one but I used 2)
1 or 2 cans tomato sauce (don't remember which I used recipe didn't call for)
4 cups vegetable broth (had my own made and frozen)
1 and 1/2 tsp garam masala
1/4 tsp ground chipolte (called for 1 tsp cayenne but I subbed)
1/2 tsp cumin
1/2 tsp nutmeg
1/4 tsp cinnamon
Some salt and pepper (I didn't measure it)

All dumped in the crockpot and cooked. I did a couple hours on high and the rest on low. I love all the spices I've been trying in various recipes lately. I've tasted this stew this afternoon, and I like it. I'm not sure about the nutmeg and cinnamon that are in it, and I notice they are not part of your recipe. I'll ask dh what he thinks about them. He can taste anything and tell you just what is in it, and I'm wondering more if he thinks they belong in it or if it would be better without. I'm ok with it either way. Thanks for the recipe, though. Your recipe contains things I have pretty much on hand all the time so it would be a great easy dish to make (and I'm looking for lots of ideas).
 
Nutmeg and cinnamon are used a lot in Moroccan cooking...but not a favorite of mine (tastes off to me....l think sweets with those 2)

Dh uses them sometimes(in meat dishes) but not in lentils.

If you guys like beans there is another recipe that is for beans but not lentils that is RIDICULOUSLY easy to make but tastes soooo good. I will post it.

Yes I use Hillshire Farms smoked sausage which is already cooked. ;)


I'm sick as a friggin' dog so whatever the peeps can fix themselves...............back to the couch I go...............::sicky:: :sick1:
