What's For Dinner?

Today is a yummy food day. I made potato pancakes with pear sauce, scrambled eggs, and freshly juiced juice for breakfast. Lunch is quinoa black bean burgers, honey mustard kale chips, and roasted root vegetables. Dinner will be spaghetti squash with bay scallops and white wine sauce.
 
DH is in Atlanta all weekend. Yesterday it was McDonald's and tonight is a rotisserie chicken that I picked up from Walfart with a bag of salad..............dinner is done. :bowing:

New delivery guy.........young man from Scotland. He didn't have a jacket on..............said where he's from it's not cold enough yet for a jacket. :lol:
 
a little bit of this and a little bit of that.......leftover night plus I made rice pudding because I had the urge to stuff myself on comfort food
 
Chicken kabobs, homemade steak fries and garlic bread all cooked on the grill. Love the easy clean up.
 
Spaghetti and meatballs with Texas toast tonight.

Anyone know of a good smoke sausage recipe? I have two pakages of eckrich smoked sausage in my freezer and no idea what to make with them but want to use them up!

YES! You could slice them up and put them with shrimp in a jambalaya recipie. Or easier you could lightly brown them on the grill/stove and drain grease. Then cut up 1-2 red peppers, 1-2 green peppers, a med onion and mince a couple cloves of garlic. Season with a little salt and pepper. Put in the crockpot with approx 2 cups of chicken broth for about 6-8 hours and have easy sausage and peppers. Serve over noodles or rice. Or just add instant rice in the last couple of hours and mix in the liquid. Really easy and good!
