I'm going to a Super Bowl Party and the menu is Mexican food. Does anyone have any suggestions for what to take - maybe a side dish or appetizer? Anything in the crockpot would be great. Thanks for your suggestions.
 
This is good and really easy.

>1 lb. ground beef
>1 1/4 oz. pack taco seasoning
>1 c. water
>1 can (15 oz) chili beans in sauce
>1 can (16 oz) sliced stewed tomatoes
>1 1/3 c. instant rice
>
>Brown beef and drain; put in 3 qt. casserole dish.
>Add seasoning mix, water, beans, and tomatoes.
>Cover and microwave on high 6 or 7 minutes until bubbly.
>Stir rice into hot mixture; cover and let stand 10 minutes for rice to
absorb
liquid.

Rotel Sausage Dip

Ingredients:
1 lb. ground beef
1 lb. sausage, casings removed
1 medium onion, chopped
1 lb. pasteurized process cheese spread, cubed
1 can (10 oz.) RO*TEL Diced Tomatoes & Green Chilies, undrained
1 teaspoon garlic powder

Directions:
In a large skillet, brown beef, sausage and onion; drain. Add remaining ingredients; stir over low heat until cheese spread is melted. Serve warm with chips or oven baked potatoes. Makes 12 servings.


You can use Velvetta for the cheese and sausage that comes in those tube-like packages. Use your crockpot to melt the cheese over the cooked ingredients.
 
Taco Soup

1 pound ground beef
½ packet dry ranch seasoning
1 packet taco seasoning
4 slices bacon, cooked and diced
1 medium onion, chopped
1 can chicken broth
1 can rotel
2 15 oz. cans pinto beans, undrained
1 can black beans
½ cup salsa
1 14 ½ oz. can whole tomatoes
½ tsp ground cumin
1 T chili powder
3 cloves garlic, minced
1 can corn
¼ cup loosely packed cilantro

Cook bacon in microwave until very crisp. Set aside to cool. Brown ground meat and onions in skillet. Drain and add taco seasoning. Transfer bacon (crumbled) and meat mixture to soup pot and add remaining ingredients (except cilantro). Bring to a boil, stirring occasionally. Reduce heat and simmer for an hour or two to let meat soak in flavor. Add cilantro at last half-hour of cooking. Can top with shredded cheese and/or tortilla chips.

You could easily put this in a crockpot instead (after browning meat and all that).
