Freezer cooking

Baby #6 is due in 5 weeks so I spent most of the day prepping foods for the freezer. Today I made...chocolate chip pancakes, waffles, banana nut ****ins, dinner rolls, chicken enchiladas, chicken fajitas, peppers & sausage. Tomorrow I plan to make sloppy joe's, taco meat, meatloaf, lasagna and meatballs. Seems like I worked my butt off but it will probably all be gone in two weeks after the baby is born.
 
Wow busy girl! Great job! :hiphip: Two weeks is a good amount of buffer time. After that you should be ready to move around more (unless you have a C-section). And with all those kids around to help with the baby, you'll be able to do stuffs. I was 11 when my sister was born at the end of May. All summer I wouldn't let my mom have her baby lol. I got her up, changed her, dressed her, fed her, rocked her, etc.............like my own live baby doll. I remember my mom saying "Can I have my baby?". :lol:

My sister is 26 now and we're still very close (and I'm still very protective!). :)

Thanks for the ideas and inspiration! I gotta get in gear...baby is due in 7 weeks for me :)

Another couple ideas: Put chicken breasts in the crock pot with a bottle or 2 of bbq sauce, cook on high for 5 hr., shred it up for pulled chicken sandwiches. Make extra and freeze in whatever sizes work individual dinners.

Do the same with chicken breast and salsa. Use the shredded meat for tacos, etc. We like to put them on tostado shells w/ taco toppings.
 
I love using the freezer........We roast chickens and have bags of meat, either for chicken salad for lunch or for tacos. Also, we roast pork roasst (supreme is our favorite)..and then have bags of cut up pork that can either just be reheated on the grill or cut up for tacos.

The other day I also made 4 loaves of bread to go with pasta dinners!

That is our favorite way to have tacos!!!!!


How about making some soup? Taco soup is yummy and very easy to toss in the crockpot...makes ALOT and freezes well.

Taco soup. I make it in the crockpot (brown up some ground beef and onions and them dump it all in the crockpot on low all day)

Ingredients

  • 2 pounds ground

  • 2 (15 1/2-ounce) cans pinto beans
  • 1 (15 1/2-ounce) can pink kidney beans
  • 1 (15 1/4-ounce) can whole kernel corn, drained
  • 1 (14 1/2-ounce) can Mexican-style stewed tomatoes
  • 1 (14 1/2-ounce) can diced tomatoes
  • 1 (14 1/2-ounce) can tomatoes with chiles
  • 2 (4 1/2-ounce) cans diced green chiles
  • 1 (4.6-ounce) can black olives, drained and sliced, optional
  • 1/2 cup green olives, sliced, optional
  • 1 (1 1/4-ounce) package taco seasoning mix
  • 1 (1-ounce) package ranch salad dressing

Directions

Brown the ground beef and onions in a large skillet; drain the excess fat, then transfer the browned beef and onions to a large slow cooker or a stockpot. Add the beans, corn, tomatoes, green chiles, black olives, green olives, taco seasoning, and ranch dressing mix, and cook in a slow cooker on low for 6 to 8 hours or simmer over low heat for about 1 hour in a pot on the stove. To serve, place a few corn chips in each bowl and ladle soup over them. Top with sour cream, cheese, green onions and jalapenos.
 
I love using the freezer........We roast chickens and have bags of meat, either for chicken salad for lunch or for tacos. Also, we roast pork roasst (supreme is our favorite)..and then have bags of cut up pork that can either just be reheated on the grill or cut up for tacos.

I do this a lot too. My Mexican market has a sale every few weeks of chicken leg quarters for .49/lb. so I buy a bunch, roast them, pull the meat off and put into freezer bags. Great for soup, chicken and dumplings, tacos and so much more. :cartwheel:
 
I love to do freezer cooking. I love to do a huge batch of meatballs and freeze half of them for later. Also make my own garlic bread (4-6 loaves at a time) and freeze those for later on. Tastes so much better than the store bought frozen cardboard-tasting garlic bread and no preservatives either! Whenever I make baked pasta, I always freeze half for a quick dinner a couple weeks later.

Since I have all these milk cats from Jewel, I plan on making a couple of pots of cream of potato, cream or chicken, etc soups this week and freezing those in individual sized servings. They will be great for DH to take in for lunches at work or for those nights when only one of us feels like eating and we can pair it up with some bread or dinner rolls and a salad.
 
This is great! Although DH probably thinks that I have no reason to freeze meals since I do not work and only have one child......

When you freeze your "meals" are they fully cooked?
We froze lasagna for the first time the other day and I am worried it will be mushy since it was cooked.
How do you defrost? Do you microwave them or put them back in the oven?

Sorry, this is all new to me but sounds like it could help my family of three who NEVER want the same meal.
