I did coat them with sugar, maybe not enough?

My 4 year old niece should be over tomorrow. If so, we will try them again. She likes to help.

All in all, just like anything, one person's idea of :quotes:good:quotes: cookies could be the next person's idea of not-so-good..... I don't care for sweet stuff, but i guess that's kind of an extreme example for someone who bakes all day long... :lol:

take for example, coconut... I hate coconut and would have to get someone else's opinion if I made coconut cookies , cause I know I'm not going to eat them or like them if I did. :lol:

Oddly enough, I LOVE a Thai sauce made with coconut milk and peanut butter, which I also despise .... wacky, huh?

We apparently have absolutely nothing in common when it comes to food.

Pepperidge Farm coconut cake :drool: (which happens to be in my freezer right now :bliss: )

Making the situation worse for travelers, blizzard conditions are accompanying the snowstorm invading the Upper Midwest today.

Snow will continue to spread eastward across the Upper Midwest into tonight, leaving the Dakotas in the process.

The heaviest snow, totaling 6 to 12 inches, will blanket central Minnesota and west-central Wisconsin. Minneapolis-St. Paul, Minn., and Eau Claire, Wis., lie in the heart of this zone.
Drivers are urged to use caution as the snow is creating slick and treacherous travel throughout the Upper Midwest, including on Interstates 29, 35, 75, 90 and 94.

Along the southern end of the snow zone -- south of I-90 in Minnesota and toward Madison, Wis., and Grand Rapids, Mich. -- the majority of the snow will fall on grassy surfaces with roads becoming slushy.

However, an invasion of bitterly cold air tonight will cause these slushy spots on roads and sidewalks to turn icy.

It is not just falling snow creating hazards for motorists, but also blizzard conditions as biting winds significantly whip the snow around. Visibility will become dramatically reduced as snow drifts form.

Such conditions have unfolded across eastern South Dakota and neighboring southeastern North Dakota, and will develop in a west-to-east fashion across western Minnesota as the day progresses.

Eastern Minnesota, home to the Twin Cities of Minneapolis and St. Paul, and western Wisconsin will be subject to the blowing and drifting snow tonight.

The howling winds will also continue to drive arctic air across the Rockies and Plains today, setting the stage for a second zone of snow to dive southward into New Mexico (including Albuquerque) and West Texas.

cookiemom, I tried the Melting Moments cookies again and they taste a whole lot better now :) I think when I tried them last night they were still warm. I tried the NFSC when they were warm and didn't like them either, but after they cooled I did :9: Lesson learned, wait impatiently for them to cool then try them..

Joan I'm making 9 dozen coconut butter balls for the cookie exchange that I'm in on the 15th. My Mom always makes these at Christmas time. It's the only time I will eat coconut in anything!

Pretty easy, yeah,

1 C butter
1/2 C sugar
2 tsp. vanilla
2 C flour
1/4 tsp. salt
2 C (1/2 lb) pecan halves
1 egg white
1 tsp. water
3/4 to 1 C flaked coconut

Heat oven to 350. Cream butter, sugar and vanilla until fluffy. Blend flour and salt; stir into creamed mixture, blending thoroughly. If dough is soft, chill until firm enough to shape. With fingers, shape a rounded teaspoonful of dough around each pecan half (cut very large pecan halves in two) to form 1" balls. Beat egg white and water with fork. Dip dough in egg white mixture, then in coconut. Bake on lightly greased baking sheet 15 to 18 min., or until lightly browned. (These cookies store well if kept in a tightly covered container). Makes 5 doz. cookies.

This is the closest pic I could find. They come out of the oven a little browned though, not bright while like that.

Thanks Rebecca - I think I might add them to what I'm making this year.

I'm hoping to get the baking done this coming weekend. I'll bring some in to work next Monday (boss goes away next Tuesday for the week), can bring some to both neighbors during the week as well. Then will bring some of the stuff that stores well with me on Christmas Eve and Christmas Day.

I have to make up a list of what ingredients I still need and hopefully go shopping one evening this week.

Cookie does the filling in the thumbprint cookies firm up? I think your Christmas checkerboard cookies are much prettier. :)
