A Romantic Dinner

For music, I like Dave Matthews "Crash Into Me." Just the song, though. Some of the other songs on the cd are too fast, at least if you're aiming for romantic.

Hmmmmm Prox I suppose you could try it with white grape juice, or maybe even water...or chicken broth...There are also some non-alcoholic wines out there (so I guess essentially grape juice but more wine-like), one is by Sutter Home and it's called "Fre"...I don't know if the store would still let you buy it but maybe one of your parents would be willing to buy it for you since it's non alcoholic?

Well, I just checked all my cookbooks and found nothing. My recommendation would be either chicken broth or non alcoholic wine.

Prox, I just went back and looked at the recipe. I'm fairly decent in the kitchen, and I gotta go with hermie on using chicken broth. However, if you wanted to go with non-alcoholic wine, they'd let you buy it with no problem. I mean..it *is* non-alcoholic. Good luck

Hermie you are the BEST. That recipe was great. Karma comin your way. My GF says thanks alot. The dinner was great. I ended up using grape apple cider (you know the fake wine that parents buy kids to make them feel better about not having anything fancy to drink). It worked out prefect. All you guys lookin to impress your girl friend (or girls that want to impress your boy friend) I recomend this dish. I served it surrounded in Rice. YUM!!!!!!

I've got tons more, unfortunately I probably don't have time to post them before V-day...

But if any of you are like me and not *really* doing the romantic dinner till Saturday, let me know your preferences (what kind of meat, or vegetarian, and what sort of flavors you like) and I can post a recipe.

Another chicken recipe would be great. I love chicken, and it would be fun to suprise her with another soup recipe.

OK, I will peek and see what I've got...I know I have some more good chicken recipes, just want to find one that will be right for a romantic occasion :)

By the way, how do you have access to a kitchen and equipment, living in the dorm?

I actually live in an apartment now. So yes I have a good kitchen, with a real stove and everything :)

Pasta with Mushroom Sauce

Still looking for something w/ chicken, but this is one of the most impressive recipes I've ever found, and it's easy!

1 1/2 cups dried porcini mushrooms (about 1 1/2 ounces)
2 teaspoons olive oil (I usually use more, though)
1/2 cup finely chopped prosciutto (about 2 ounces)
1/2 cup finely chopped onion
4 cups sliced cremini or button mushrooms (about 8 ounces)
1/2 teaspoon grated lemon rind
1/2 teaspoon salt
1/4 teaspoon black pepper
2 garlic cloves, minced
1 cup chicken broth
3/4 cup dry red wine
1 tablespoon cornstarch
1 tablespoon water
1 pound cooked cavatappi or fusilli pasta

1. Combine boiling water and porcini mushrooms in a bowl; cover and let stand for 30 minutes. Drain.
Rinse and coarsely chop porcini mushrooms.

2. Heat oil in a large skillet or chef's pan over medium-high heat. Add prosciutto, and saute 1 minute. Add onion,
saute for 3 minutes or until tender. Stir in the porcini mushrooms, cremini mushrooms, and next 4 ingredients
(up through garlic); cook 4 minutes or until browned, stirring frequently. Stir in broth and wine, scraping
the pan to loosen browned bits. Bring to a boil; cook for 3 minutes. Combine the cornstarch and 1 tablespoon
water in a small bowl. Add cornstarch mixture to pan; bring to a boil. Cook 1 minute, stirring constantly.
Add pasta, tossing to coat.

Enjoy!
