My personal most favourite ones are : spicy cheddar, Swiss, aged Gouda, Brie and Havarti. I love mine in : BLTs, grilled-cheeses, other sandwiches, cheese, fruits and wine, cheese and crackers and finally : on a cheese platter with different veggies and cold cuts. And you personally? I enjoy cheese any time of the year but it is usually only some kind of cheddar cheese that I tend to have in sandwiches or even on baked potatoes.
Each year at Christmas though I like to get blue stilton to have on my crackers around that time, it's always been something that I have done that time of year and wouldn't feel the same if I didn't.
I also enjoy cream cheeses one of which being garlic and herb on crackers.
