Looking for recipes for meals that are easy to freeze and reheat

A friend of ours is battling cancer for the second time (a different kind of cancer than he had before) :( and I'm trying to help out with meals for his wife and 2 young children while he's getting treatment. They live an hour away from me so I need meals that can freeze easily and they can use when they need them.

Thanks for any help.
 
Lasagna...

I'm a lazy cook. I put noodles, sauce, cheese and sausage (or whatever meat) together and bake and then freeze. It is yummy.

Beef stew. Beef stew meat, gravy and frozen stew veggies in the crock pot. No prep.

Pepper steak. Meat, sauce and a bag of frozen peppers/onions in the crockpot. You can make the sauce and freeze with the meat.

There are websites with "dump chicken" recipes where you put all the ingredients together and freeze and then bake or put in the crock pot.

Hhmm... I made a chicken bruschetta bake that was good. Cooked chicken, canned tomatoes, mozzarella cheese and stuffing mix. I think that would freeze easy.

I'm all about easy!
 
Here's what we do for quick meals

Buy a huge bag of Kaiser Rolls (from Sams Club)
Buy some Deli Ham or Pre-Packaged Ham (sams club)
Onions, cheese, mustard.

We slice up the onions and put them in the microwave with a small amount of butter till they are cooked (just a few minutes)

Then we assemble sandwiches, cheese, ham, onions and mustard if desired. We wrap each up in tin foil and throw it in the freezer.

Just take them out and throw them in a 350 degree oven when you're ready to eat. They are crispy on the outside.....then just make a side dish to go with!
 
Most anything works except potatoes. They can get gummy/pasty. Some people don't mind but I'd rather not.

Rice works extremely well. Cook, cool and freeze it. Add some water when reheating.

This sites has lots of freezer cooking recipes, but many are BULK so you might want to check the serving sizes.
