If your educational organization / Institution is located in European community, you can register .edu.eu domain on https://register.edu.eu
They are official and accredited registrar

In order to register edu domain you need to own an educational institution (post secondary upward) and your institution should be based in the US. The domains are also available for registration in Europe. In other countries, you can get edu domain only for the country domain (edu extension will be followed by country code).
A friend of mine have been looking for a way to register her own education domain and this seems to be a break through for her. I'm definitely going to take this to her and hopefully she can get it all set up.
